Overview

Combined Redash analytics layer and self-hosted Appsmith operator console replacing spreadsheets and aggregator portals — giving kitchen managers real-time order flow, prep-time SLAs, and AI-predicted demand spikes visible on a single screen.

The challenge

Three dark-kitchen sites ran 6 brands across Jahez, Hungerstation, and Talabat. Kitchen managers toggled between three aggregator tablets and a WhatsApp group to track order status, leading to a 24% prep-time SLA breach rate and chronic over-ordering of perishable ingredients. There was no demand forecasting — ingredient waste averaged 19% of food cost monthly.


The solution

Our approach

We built the operator console on self-hosted Appsmith, normalising real-time webhook feeds from all three aggregators into a single PostgreSQL orders table. A Node.js bridge translates each aggregator's webhook schema into a canonical order event. The Redash layer sits on the same PostgreSQL instance, providing shift-end analytics on prep times, brand-level order mix, and ticket size. Gemini powers a demand-forecasting model trained on 14 months of historical order data, surfaced in Appsmith as a 4-hour ahead ingredient staging recommendation.
